The Girls Outside!

I have no clue what order NoBite is going to post the pics, but there is a pic of my Dry Pond, Dominic and Princess Lily Belle. One pic of the neighbors DD's (well, at least 2 of the A-holes). The black Dane pup seems okay. I hope NB blows that pic up, so you can actually see their partial pack of dogs. But, if not, you can at least see I take pride in my property and the neighbors don't.

So, I need really good recipes for ground venison...

Got to disguise it.

Suggestions?

Almost any beef recipe can be converted to a venison (ground) recipe.

Make chili with it--black been chili is particularly good--make it from dried beans--not canned (that's cheating anyway--all chili should be made from dried beans).

Make spaghetti sauce with it. Make lasagna with it. Make enchilada's with it.


Almost any Italian or Mexican/Spanish recipe using ground beef will work with ground venison and the spices used will disguise it.

I'm playing catch up--got several pages behind when the carpet cleaner, washing machine and vacuum cleaner all had 'just in time for the holiday' breakdowns (the vacuum just plain up and died but I think it was nearly 40 years old-this time it was beyond repair.

So Beau--poutine--? Why would anyone think anything was wrong with poutine??? It was one of my great incentives to show my dogs in Canada--the food service at the curling rink where most of the BC shows were held served French fires for the US crowd and poutine for the Canadians and me...

Lady Di--Toad will get sloppy sour dough toast dripping with butter and blackberry jam for breakfast. For lunch he gets a 1/4 of a baked ham sandwich with mayonnaise and sharp cheddar and lettuce--and if there is any left over salad he can have that too.

Hey STJ since we are telling good dog stories. Here's Toad's.

Toad, is a social butterfly and always feels bad when total stranger don't want to pet him while he leans on them. So the other day I had been to the grocery store and was taking stuff into the house when I noticed there was a UPS truck across the street--the driver was reorganizing stuff and I figured I'd wait and see if the dog food was on this load--kind of thought it might be from what the order shipped notice they send out as an e-mail said.

I heard the guys scanner beeping and he backed out and dropped a box that looked familiar on his dolly--he looked up, saw me and hollered "Yeah, it's for you!"

As he came across the street he asked me what kind of dogs I was feeding--I told him, big ones. About that time, Toad, who had been sleeping in front of the front window stood up.

The driver was amazed--said "Wow--BIG!" and asked if he was friendly-by this time we were at the door and when I opened it Toad rushed out to sit beside the driver and get his pets. Driver knew how to pet dogs and Toad was so obviously thrilled to be petted it probably made up for being barked at by dogs in houses along his delivery route.

Such a good dog Toadie--making friends where ever he goes.

(I don't tell people that they would meet a very different dog if they were in the back yard late at night)

Back to trying to figure out exactly what the problem with the big carpet cleaner its....not as much fun as reading CT but reading the CT doesn't get the carpet cleaned.

My first dobe Caesar had the bad habit of rushing open doors and zooming off (what can I say..I was young then and didn't know how to fix it). One time I saw a UPS driver heading up the driveway and opened my door to greet him. Caesar rushed out the door toward him at full speed. The driver just about had a heart attack....and then Caesar zoomed on past him and disappeared into the distance. The poor driver just stood there in the driveway gasping for breath.

Profuse apologies ensued.

But if I had managed to slow the dog down, he would have behaved like Toad and leaned all over the driver.

I guess I missed my chance to turn someone into a friend/lover of dobes.


Bug, why clean the carpet? It'll just get dirty again. Of course, why read the CT? It will just go around in a circle again. :smile12:

Tough choice--but which is more fun? :clap3:

Don't answer that--you may be incriminating yourself by admitting to a cleaning disorder (which I totally can't understand) and you'll also hurt our feelings.

And I bet a lot of Indian recipes that call for lamb would taste great using venison too.

If you like Indian cuisine. Or lamb.
LOL--I'll be you're right about the Indian recipes--I like Indian food and I like lamb.

I also like Thai, Chinese, and most seafood.

Just thought about this ever growing list--basically like most food...that's the bottom line.

And now I need a nap--the lil' red puppy bitch whose ears I have been posting got her Christmas present early--I sent her home telling her owner--"She's done..." I'll miss seeing her--she offers behaviors that she knows will get her cookies--tries sitting with her ears up first for me--but if I'm too slow with a cookie she'll try the 'down' she recently learned. Puppy push ups one of the local trainers calls them. 'SIT--good girl, DOWN--good girl and SIT-good girl.'

She started teething a week before she hit four months and two weeks ago her lower puppy canines had fallen out and her permanent lowers were in--last week her upper puppy canine were being pushed out of line by the permanents and week all the puppy teeth are gone and permanent teeth are all well above the gum line. Five months and two weeks...

Lamb is my favorite red meat, followed closely by wild venison. My favorite cuts are the strap back for hot roasting and the saddle for braising.

Right now I have 4 lamb rib chops waiting to be pan broiled for my dinner. Poor Nancy doesn't eat red meat... She gets stuck with the Mexican chicken soup with rice, black beans, fresh salsa, and tortillas that I made. Yeah... Poor Nancy.

I'm not so fond of greek...or beans either. Though good black beans are nice, and limas with lots of butter and black pepper hit the spot too from time to time.

And Boston baked beans, homemade. My mom had a great recipe for those..the sweet stuff and some bacon, but also some green pepper added....wonderfully brown sugar sweet, but sorta spicy too. Unfortunately that recipe is lost to time....I never got a copy from her.

You know, I've never tried lamb chops....they're on the costly side and look so small too. But I use both the leg, shank and shoulder in my various recipes.

SP Check out YouTube recipies under “Bambi Burgers” ....my brother in law used to make these with carmelized onions.
Venison is so lean......had to add fat to get the burgers to hold together........delicious burgers......stew is also real good.
Oh by the way thanks so much for the pumpkins cookies that you sent me ...they WERE delicious.
So when does the venison arrive ? What’s the scoop ...do you have hunter friends that like to kill ...but refuse to eat their kill?

Long story short, so you will feel better.

Back in the day, I lived with an avid hunter/fisher dude. I lived with him for 10 years. No doubts about his hunting habits or ethics. If he wasn't sure that he could make the kill, he wouldn't take the shot. Very humble, yet, successful deer/turkey hunter.

The co-worker that is getting the meat is that same type of hunter.

His wife is the problem. She refuses to eat venison. So, ALL that meat has to go to good use to the people that like it!

I've got a couple of neighbors that have deer feeders on their property. It's baiting, but legal. I don't condone that.

The hunters I told you about, above, went out and did their homework weeks before stalking them and harvesting.

Problem with that is, Mister doesn't like onions! How can one cook without onions???

If I use onions, I have to make sure they are extremely micro-minced and send him to the store, while I get rid of the evidence.

Thanks for the start. My problem is... My deceased friend told me about some other secrets to disguise it. Like certain spices?

I really am at a loss here. Wait!

Half hamburger, half venison meatloaf! Then I have to throw some spices in with the meat. Mix it, bake it. I won't have to drain the fat!

Pop it in the oven again, with home made BBQ sauce slathered on top!

Mel... I own the entire Time Life cook book series. Foods Of The World. My go to baked bean recipe comes from The American Cooking/New England book. I have used it for 40 years.

Here is a repro from the web. Called Harlow House Baked Beans. Never fail Keeps for weeks.
