You guys inspired me to take some chili out of the freezer that I froze this summer after I made a big batch! I love all kinds of chili. It's such a great food - so flexible. So many ways to make it, so many delicious recipes!
Glad we could be of assistance!

melbrod Food talk (in response to previous posts):

1. I like maple syrup with my sausage.

2. I love black beans, and would much rather have good homemade borracho beans than those nasty refried things.

3. I dot chili around on corn chips, lots and lots of very sharp cheese (detect a pattern here?), a few fresh sliced jalapenos, and microwave to make a version of nachos. Served with sour cream of course. I suppose some people would include some fresh salsa heaped on top after the microwaving, but why try to make the meal healthier?

4. Apple jelly and peanut butter make a good sandwich; apple butter is good with peanut butter too. If you're really feeling decadent (and if I eat peanut butter, I'm usually feeling decadent), add butter to your sandwich...it cuts the stickiness and complements the flavor. IMO

5. We use tabasco, but generally prefer a hot sauce with a little less vinegaryness (that's a word--right?). We also have a jar of ghost pepper sauce which sneaks up on you and then there's nothing you can do but live with the burn for a half hour or so. Too hot for me, and even a bit much for my son I think (though he would never admit it.)

6. I'm taking a new medicine which requires that you take it on an empty stomach about an hour before you eat (or a couple of hours after your meal) So I get up and take it right away and then wait for breakfast. I never was that much of a breakfast fan and was never particularly hungry in the morning (no comments from you guys about my sleeping through breakfast, please ), but now that I have to wait, I get up ravenous.

So--for Denny--I tried to think of what needed slicing and dicing for chili--the only thing I could think of was onion, garlic and peppers. I use canned tomatoes so I wouldn't be slicing (or dicing ) tomatoes.

About red chili (which is traditionally without beans (and is called by my Mexican friends chili Colorado con carne y frijoles). I rarely make red chili and when I do I don't make it with beans. Mostly I make black bean chili--obviously that one is with beans--lots of meat (usually beef but sometimes a mixture of beef and pork) chili's, sweet peppers too, onions, garlic and all the traditional spices.

No Denny--I don't use tabasco sauce--I make a medium hot chili and if anyone wants it hotter I hand them the bottle of tabasco sauce and a container of ground red chilis (very hot stuff).

Now I really have to go feed those clinic kitties. Toad is snoring--he learned it from Lady Di.

Tabasco sauce is a staple in our house...we use it on a lot of foods. Running out of tabasco sauce is akin to an emergency around here

WTH? And why? Nope, nope, nope, that's too creepy.

We're supposed to get our fair share of rain tonight and tomorrow which is great because on Tuesday, the grass people are coming to core aerate and power seed our lawn and they wanted the grass cut short (done) and watered so that the soil wouldn't be rock hard.

modm Has been raining last couple days straight - Mila was not happy. She would want to go out....I open the door and she would look up at me all sad.

But she would brave it and run out. So I would have to as well - with my umbrella!

Jimmy Dean - Big Bad John - https://www.youtube.com/watch?v=KnnH..._S3QDo&index=5

"Big Bad John"

(Big John)
(Big John)

Every morning at the mine you could see him arrive
He stood six-foot-six and weighed two-forty-five
Kind of broad at the shoulder at narrow at the hip
And everybody knew you didn't give no lip to Big John

(Big John)
(Big John)
Big Bad John
(Big John)

Nobody seemed to know where John called home
He just drifted into town and stayed all alone
He didn't say much a kind a quiet and shy
And if you spoke at all you just said "hi" to Big John

Somebody said he came from New Orleans
Where he got in a fight over a Cajun Queen
And a crashing blow from a huge right hand
Sent a Louisiana fellow to the promised land. Big John

(Big John)
(Big John)
Big Bad John
(Big John)

Then came the day at the bottom of the mine
When a timber cracked and the men started crying
Miners were praying and hearts beat fast
And everybody thought that they'd breathed their last 'cept John

Through the dust and smoke of this man made hell
Walked a giant of a man that the miners knew well
Grabbed a sagging timber and gave out with a groan
And like a giant oak tree just stood there alone
Big John

(Big John)
(Big John)
Big Bad John
(Big John)

And with all of his strength he gave a mighty shove
Then a miner yelled out there's a light up above
And twenty men scrambled from a would be grave
And now there's only one left down there to save
Big John

With jacks and timbers they started back down
Then came that rumble way down in the ground
And smoke and gas belched out of that mine
Everybody knew it was the end of the line for Big John

(Big John)
(Big John)
Big Bad John
(Big John)

Now they never reopened that worthless pit
They just placed a marble stand in front of it
These few words are written on that stand
At the bottom of this mine lies a big, big man
Big John

(Big John)
(Big John)
Big Bad John
(Big John)

I am ok with honey and butter as well. Although I would probably substitute the honey with jelly - apple or blackberry/blueberry

When I was working as an electrician 25 years ago, we stopped at Hardees for breakfast. Got a sausage biscuit....I put jelly on it. The guys looked at me strange. But now a days, I see lots of people doing that.

I gather there is some discussion about whether beans should or should not be included, so just to forestall the argument...

Beans vs. No Beans: Your Arguments for the Best Chili
https://lifehacker.com/beans-vs-no-b...hili-510532114

And a few of those posts supporting MY style of chili:

Chili is short for CHILI CON CARNE...which is spanish for meat with chilis. Does it say Chili con carne con frijoles? NO. Beans do not belong in true chili. If you add beans, it's no longer chili, it's stew.

Traditional Red Chili is defined by the International Chili Society as any kind of meat or combination of meats, cooked with red chili peppers, various spices and other ingredients, with the exception of BEANS and PASTA which are strictly forbidden.

That said, they allow the inclusion of beans in other types of chili. Also, it's important to remember that the International Chili Society consists of regular, opinionated people who hold themselves to their own standards. As you'll learn later on in this post, no argument for the inclusion or exclusion of beans or meat in traditional chili is historically correct.
I am with Mel on this!!!! No beans! When I was a child, chili was for supper. I didn't want it. Of course the old trick of not leaving the table till you do eat it. I think I am still at the table!!!

I cook bean-less chili, served with a topping of very sharp cheese, and saltines - Perfect! Especially the sharp cheese

When my wife cooks chili - two pots....one for me and one for her...if I am lucky and she is feeling generous to make two!

Then we can have hotdogs with chili on top! Wavy chips and French Onion Dip to go along with.

Spock loves to sit on couch with guests, in this case my wife's nephew, where he started out just sitting next to Ben like this...

...Spock in Full "Belly Up" Position

My wife's sister-inlaw is terrified of dogs, especially the Dobes, but last time made the sleepover here and watched the Dobes show off for everyone in backyard- through the window!
She got to see even a 3 y/o toddler having fun petting and interacting with Spock, Eva and Lanah. We just told his mom to not have little boy run in backyard or he might getting knocked over by over exhuberant Dobes...
Spock is enjoying himself! Belly rubs the best! We do need to have more guests over to help keep Mila socialized
