I was going to try if no one stepped forward and I could figure out how to do it.
It does sound relatively simple--the two concerns that seem to get raised are that cards + mailing costs can run up if there are a lot of people on the list, but if you just commit to sending your cards to one or two people, it seems like some people might get left out. And also some people don't want their real names and addresses broadcast to everyone who is participating in the exchange.
With few enough people who aren't security minded, sending lists with addresses and names would probably be all you'd need to do.
If there are a lot of people participating, or people who would like to join in but have security concerns, one method I read that might work and doesn't seem too complicated is:
People who want to participate send names and addresses along with their user names, to the coordinator. The coordinator sends the complete list with user names only, to each person on the list.
Each participant makes or buys a card for each person on the list. They package them all up in a prepaid flat rate priority postal envelope or small box, include another envelope with their own name and address, and mail those to the person running the exchange. I suppose that they could even write a user name on each card's cover envelope, so they could send different cards to different people, and include a personal message for each user.
The coordinator deals out all of the cards into the prepaid envelope/box that each person sent and takes them to the post office to mail. Looks like a flat rate envelope/box is about 7-8 dollars?? and I'm thinking might hold a bunch of individual cards, so the total postage cost for each person who participates would be about $16.
Mailing cost for a standard size Christmas card is $ 0.55, more if it is oversized or over weight, or if you want to include something else in the envelope. Bulk mailing may be cheaper than mailing things individually if there are a lot of people on the list. And the only person who would know your real name and address is the person running the thing.
Of course, you would get all of the cards in one box instead of having the fun of checking the mail each day, though I guess you could ration them so that you are only opening one or two each day.
Also I'm not sure about mailing costs to Canada or other countries? I would think that you could get some kind of international version of a prepaid envelope?
