Like you said, it is generally recommended that so long as the food the breeder is feeding isn't just horrible, you keep a new puppy on it for a month or so after you get him, so he doesn't have to deal with the stresses of a new home AND a new food at the same time. Then transition to a new food if you want to taking about 2-3 weeks to make the switch.

But I don't know if the food your breeder recommended is "horrible" or not. I myself don't like to feed potato as a main ingredient, but other folks here can probably give you a better idea about whether it would be better to make a switch and whether it is a "do it now!" or a "take your time" kind of thing.
