A friend of mine’s father grew up in an orphanage. When he was older, married, had a small business--he swore he would never eat another casserole in his life. That’s all he had to eat as a kid. With 12 kids of his own, I’m not quite sure how his wife did it. But she casseroles.

I use the Joy of Cooking for reference--what temperature to roast something, how long, what you can use in place of something you don’t have....but the only actual recipes I’ve used from there were for a few of their homemade breads. At one time, I made all of the bread we ate. My french bread was the best. Then I got lazy.
