The What's for Dinner Thread!

I am sure everyone has a hard time figuring out what to have for dinner, or what to shop for. So I thought about making a thread where people post what they are having/making, recipes, pics etc! That way, when you need some ideas, you can look here and get inspiration!

Tonight we had Hamachi fish collar with smashed herb potatoes and corn succotash. This particularly inspired dish was thanks to my honey and his cravings for homey foods.

Well, Im not sure sure what you're talking about with hibachi fish or whatever, but, we had some wild, fresh copper river salmon. Grilled on alder plank with lemon and rub. Along with fresh asparagus.
Bon aptetit!

Remember: NEVER buy farmed salmon. Especially Atlantic.

Hamachi is a sushi grade tuna like fish. The collar is right behind the head is is considered a chef's/butchers cut because it is extremely flavorful, but an odd piece the public doesn't generally know about.

Also the part I quoted came off as very snarky btw.

I made a simple Green Chicken curry last night using purchased green curry paste, coconut milk, veggies, chicken, etc. Very simple recipe from Thai Kitchen. yum - next time I will add a serrano chilli or 2 - I like a bit more heat.

I feel like such a slacker. The other night, we had chicken and dumplings that I used baking mix to make. Last night, it as spaghetti with sauce from a jar. We had fried round steak a couple of nights ago. I really DO know how to cook, I just haven't felt like it lately.

I've been eating lots of tomato and cucumber sandwiches with black pepper and mayo on toast.

A lovely marinated lamb curry--make the marinade with ginger, garlic, onion, tomatoes, cilantro, a couple of serranos, blended together and cooked for a bit, then add yogurt, garam masala, turmeric--marinade chunks of lamb in that for 4--24 hours.

The rest is easy--various spices--cardamom, cinnamon, cumin, coriander added in stages to hot oil, add lamb chunks in marinade, cook for a while and add more serranos and fenugreek , brown it all, add water and a bit more yogurt, cook til thick, add cilantro, and serve over rice.

Just hot (spicy) enough, creamy--yum!

My son did the spicing and cooking--I got to be the food prep person (slicing onions, garlic, ginger, etc.), and of course also got to be the galley maid.

Actually, that was LAST night. Tonight, it's leftovers--but still darn good.

Do you ever try that combo with bacon, or are you veggie? Sounds almost like a BLT sans bacon.

Well, if we are lucky, we will be having coffee cake for lunch. I got slightly ambitious, and found a recipe for a coffee cake made with Bisquick, and added some pecans. Hope it turns out. First time in a while that I've used something other than an "add an egg and milk, then out it in the pan" mix. For this one, I had to measure out and add a few more things.

For all you guys that don't live out on the prairie, you might not understand, but tonight we're having a real treat!

We're going to have Pizza Hut! Picked it up in town after church, and we will reheat it in time for dinner!

It's always a treat to have restaurant food when you live a ways away from town and delivery isn't even an option and carry out isn't that much of an option either.


(I'm re-reading my post and it makes me seem like I'm a hillbilly hermit. I promise I'm not, it's just Wyoming isn't that populated, lol. Going into town sometimes is an all day affair.)

Saturday saw us eating Chicken Caccatiore with pasta twists.
Sunday was a Roast Chicken Dinner, (yeah I know, chicken two days in a row, but I like it and because it is seasoned/cooked differently it really isn't a problem, well for me it isn't, plus they are home bred birds. )
