Pooping in the Crate: What's goin on?

Hello,
I'm my name is Jennifer, I'm new here I live in Illinois I have two dogs Johnnie & Frankie. Johnnie is a Lab/Beagle Mix and Frankie is a Westie mix. I'm here of behalf of my sister who has a Doberman Mix

I'm here to look for any advice and help for my sister's dog. My sister got her dog in December 2008, his name is Dexter (he is 5 years old) unsure his breed is. We are guessing a Lab/Doberman mix, very goofy, rambunctious dog. He been trained, my sister trained Dexter. My sister gets up early in AM 6ish to let the dogs out and feeds them before she goes to work. So Dexter is usually in his crate for 7-8 hours a day total she or her husband comes home at lunch and let the dogs out then goes back to work. When they return home the dogs are let out again and fed. My sister has three dogs Dexter, Trixie and Gabby. Dexter *Lab/Dob mix*, Trixie *Great Dane*, & Gabby *Terrier/Pit mix*

Anyways 3-4 month or so my sister brought a new crate and up until last Friday, my sister to leave to get coffee at Starbuck, Dexter was crated for 15 minutes, when she return home he had pooped and ate the poop. Unsure why this is, she doesn't think it is medical but a behavioral issue. Ever since thing Dexter is pooping in his crate. Today she notice there were no poop but something had smelled she lifted the dog bed in the crate, Dexter somehow scoot the dog bed and pooped underneath.

Dexter is let out anytime he wants when my sister and her husband are home, his poop looks fine. What could be reason of this behavior?
