Greenkouki has it right--if you want to know for sure your vet can X-ray. But the general assumption is that most large breed dogs (and Dobes are in that category despite the fact that their standard says they should be medium size) have finished growing up and their growth plates have closed by 18 months. You could play it safe and wait until 2 years if you don't want to do radiographs.
