I doubt it was the ice that gave your dog diarrhea. But I would be suspicious of the water that was used to make the ice. A lot of dogs are sensitive to changes of water and sometimes we don't think about that when we give dogs ice from a different water source.
My dogs are all fond of ice but I give it at home from ice made from their regular drinking water and I don't give ice if the dog is very hot--generally their water is always at room temperature.
