That is what is most important what you want to do with your dog. Hey I am sure you are well past the what if they think I am crazy attitude, who cares. Writing or telling constructive criticism is one thing negativity is another, I know you can pick out the positive and work with it. So what if he has working lines, and not bred for years for that look, whatever that look is, as Rhett Butler would have said "Quite frankly my dear I don't give a dam". No dog is perfect, no matter what any championed owner/breeder will tell you about how great their dog is. It is the whole look and attitude the dog has. There are some yes if you want to use the term are straight pet, obvious to all, good looking but just not enough as a whole. Your guy is gorgeous and if he keeps going like he is and prancing with the look at me attitude, I will not be surprised to see you post his wins here.
He has a lot still going for him then some of the already championed dobes I have seen put up. At times I have to pick my mouth up and be polite when I see some wins.
Don't give up after a few tries, it is not always the dog, there are so many other facets to the showing, political, the breeder in the area that wins wins smoozshes with the judges buys drinks, lunch etc. there are some that just don't like reds, or they just like a certain look, I suggest you go more to shows and see what judges like his type of look and the ones that wouldn't put his type up if the dog beside him was even missing teeth, three legged and blind.
